Tart dough (Pâte sucrée, 20-22cm/7.87-8.66inc, for 1 tart table)

70g/0.15lb Butter
40g/1.41oz Sugar
1 Egg yolk
130g/0.28lb Cake flour
30g/1.05oz Almond Poodle

Whipped custard cream

100cc/3.52oz Fresh cream
300cc/1.05oz Milk
15g/0.53oz Cake flour
15g/0.53oz Corn starch
50g/0.11lb Sugar
2 Egg yolks
1 tsp Vanilla estruct

100cc Fresh cream
30g/1.05oz Sugar

Topping
The three grapes, when appropriate

Napage
100cc/3.52oz Water
6g/0.2oz Gelatin
40g/1.41oz Sugar

How to make
 1) Put the sugar in the butter that has been brought to room temperature and mix well with a whisk.
 2) Add the egg yolks and mix well.
 3) Add the shaken flour and almond puddles and press the dough into the bowl to blend the dough.
 4) When the dough has come together, wrap it in plastic wrap and leave it to rise for at least an hour. (If possible, let it rise overnight.)
 5) Make the whipped custard cream.
Mix the egg yolks and sugar in a saucepan, then add the flour and mix to prevent lumps from forming.
 6) Gradually add the milk and cream. Add the vanilla estruct and heat the saucepan over low heat and slowly heat to thicken the mixture.
    Stir constantly at this point. (It tends to burn easily.)
 7) Remove from the heat and place the wrapping film snugly over the surface of the cream.
 8) Wrap the dough in the wrapping film from top to bottom and roll out the dough with a swab.
    Roll out the dough a little larger than the mould.
 9) Place the rolled out dough on the moulds and press the dough to the mould with your fingers.
    Pique with a fork and let it rest in the fridge for at least an hour. (This will prevent it from shrinking.)
 10) Bake in an oven at 180°C (356℉) for about 30 minutes.
Once baked, take off the heat.
 11) When the cream has cooled, remove the plastic wrap and stir well with a whisk. (If you’re using a manual, be quick and patient!)
 12) Firmly whisk the cream and sugar together.
 13) Pour the whipped cream into the custard cream and mix it well with a spatula.
 15) Decorate the topping with grapes on top of the Pâte sucrée dough with the cream.
 16) Once the grapes are decorated, heat the nappage and brush the tops of the grapes with a brush and they are done!
