Sweet potato tart (vegan) ☆ さつま芋のモンブランタルト



for the crust:
170g whole wheat pastry flour
50g oil
50g maple syrup
a hint of salt

for the sponge:
70g whole wheat pastry flour
20g oil
60g soy milk
40g maple syrup
1 tsp baking powder
a hint of vanilla

for the soy cream:
200g soy milk
30g maple syrup
30g cane sugar
1 tbsp coconut oil
a hint of vanilla extract
a hint of almond extract
20g rice flour

for the sweet potato paste:
200g sweet potato
30g maple syrup
50g soy milk
20g coconut milk
1/2 tsp cinnamon


1. combine all the ingredients for the crust, mix well. put it in a tart tin and press down evenly.
2. bake at 350F/180C for 12 mins.
3. combine all the ingredients for the sponge and mix well. pour into the crust.
4. bake at 350F/180C for 20 mins.
5. put all the ingredients for the soy cream together in a sauce pan. gently heat it up until it thickens.
6. steam sweet potato. then make it into paste with a food processor. strain the paste.
7. put soy cream and sweet potato paste on the sponge.
